sadface, fo 'sho! dry muffins are no good. we put ours in a lidded pyrex dish and refrigerate them - it seems to help a bit. sorry about those dry muffins though. argh!
It's the fault of The Man.
It's okay! Dry muffins ar the perfect excuse for cutting them down the middle and spreading on peanut butter or jam or something creamy or for toasting them with butter.
