Mofo Monday: Food I Eat

Mondays are reserved for random food I make and eat. These are a baked seitan burger that I tested for Joni over at Just the Food. I make these a lot but since acquiring a metric tonne of Daiya I decided to use her original suggestion with these and stuff them. The first picture shows the burger mixture being divided into top and bottoms and getting a sprinkle of Daiya in between.

And here is the finished product, covered with the amazing Bar B Cutie sauce and a side of sauteed kale and carrots. Served up on 50/50 burger buns from American Vegan Kitchen. The buns will make a few appearances this month.



A side note for the day: The good man at I-40 Vegan has posted a picture of the scalloped corn and okra casserole I blogged about last week. Get your okra on, my friends. Also, send some of those rolls he made for today. They look fab.

I think they are my favorite veggie burger. If I had a grill, they would be excellent for a summer cookout.

i'm kinda sad that i didn't think about stuffed burgers until right now. man, i've been missing out all these years! were it not for your post i'd probably still be walking around dumb to the fact that one can stuff a burger. aaaaaaahahahahaha! (and just last week i figured out the whole "just turn your burrito a little to get even guacamole distribution if you find it to one side" technique. i promise i don't live under a rock - maybe just in a cave.) hooray for more daiya usage, and rock on with the homemade buns. that's one plate 'o awesome, fo 'sho! now i'm off to take a peak at the scalloped corn and okra casserole. w00t!

my mom used to make "inside-out cheeseburgers" when I was a kid.

It is only 10 AM, but I want one of those NOW! Extra pickles please.

Those 50/50 buns look so fluffy and delicious! I've yet to see a copy of the American Vegan Kitchen, but I hope to soon just so I can get that bun recipe!

I don't think the recipe is on her site right now. But there are plans for the book to get published.
