
Another old favorite is the chickpea spinach curry from Vegan With a Vengeance. This bowl is looking a bit ghostly but that's because I was in a hurry to take the picture so I could eat. Thus there is still steam streaming off the curry. Always a good choice.

I wasn't hungry before, but now that I saw this picture I'm suddenly starving.
That was the first recipe I tried from VWaV. I must have liked it because I was hooked after that. Most of my favorite curries have chickpeas in them.
I don't see how this could be anything but ghostly and delicious!

VWAV was my first vegan cookbook, and there are still many things I haven't tried. This one just made the top of my list!
I've never made that curry. I always end up using my chickpeas for something else. I must bookmark that
recipe.
